Ingredients
1 cup plain flour
1 tbsp sugar
1/4 tsp salt
2 large eggs
1 1/2 cups milk
Icing sugar, to serve
Fresh fruit of choice, to serve
Method
- In a large bowl, whisk flour, sugar & salt to combine. Create a well in the centre of the dry ingredients. Crack eggs into well. Gradually pour in milk, whisking from the centre to incorporate dry ingredients. Let stand at room temperature until small bubbles form (about 15-20 minutes).
- In a small skillet over medium heat, melt butter. Drop 1/4 cup batter into pan, then swirl to coat bottom in a thin, even layer.
- Cook until just set, about 2 minutes, then flip & continue to cook until second side is golden brown. Repeat with remaining batter.
- Dust crepes with icing sugar & serve with fruit.
